Mash the banana or blend until smooth
Add the melted coconut oil, eggs and vanilla and mix
In a separate bowl, combine the almond flour, baking soda, salt and cinnamon
Combine both mixtures until fully mixed
Add a 1/2 tsp coconut oil to a pan over a medium heat then add the mixture to the pan 1/4 cup at a time
Fry for 2-3 minutes per side until cooked then store in a low-heated oven to keep warm until you have finished the whole batch
Serve with berries, coconut yoghurt and a drizzle of manuka honey!
