Fluffy Gluten Free Banana Pancakes by Pollen + Grace

Ok, we get it, you’re hungover, you feel sorry for yourself, you need a treat – you need pancakes. Cook up your favourite pancake recipe, or try our healthy, easy pancake recipe below, then top them with lots of fresh berries and a drizzle of manuka honey.

Fluffy Gluten Free Banana Pancakes (makes 8-10)

  • 3 ripe bananas
  • 1/3 cup coconut oil
  • 4 large eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups almond flour
  • 2 tsp baking soda
  • pinch of salt
  • 1 tbsp cinnamon
  1. Mash the banana or blend until smooth

  2. Add the melted coconut oil, eggs and vanilla and mix

  3. In a separate bowl, combine the almond flour, baking soda, salt and cinnamon

  4. Combine both mixtures until fully mixed

  5. Add a 1/2 tsp coconut oil to a pan over a medium heat then add the mixture to the pan 1/4 cup at a time

  6. Fry for 2-3 minutes per side until cooked then store in a low-heated oven to keep warm until you have finished the whole batch

  7. Serve with berries, coconut yoghurt and a drizzle of manuka honey!
