This will have you positively jumping out of bed in the morning. The combination of oats and cherries can support the production of melatonin, which is important for regulating the sleep–wake cycles. In addition, both are an excellent source of fibre for our gut microbes. Almonds supply magnesium, which is key for relaxation, and they also have a rather soothing effect on the palate.

Serves 1

INGREDIENTS

2 tablespoons flaked almonds (see tip)

50g oats (ideally sprouted)

15g frozen unsweetened cherries

1⁄2 tablespoon almond butter

1⁄2 teaspoon almond extract

75ml unsweetened almond milk (or milk of your choice), plus extra if needed

STEPS

Preheat the oven to 180°C/Gas 4. Line a baking tray with
baking parchment. Spread the flaked almonds on the baking
tray and bake for 20 minutes. Leave to cool and then store in
an airtight container.

Prepare the bircher the night before you want to eat it. Mix
all of the ingredients (except the toasted flaked almonds)
together in a bowl. Cover and leave in the fridge overnight.

In the morning, remove from the fridge and leave for
10 minutes to come to room temperature. If it has set too
thick you may want to add a little more almond milk. Top
with the toasted flaked almonds.

tip
When toasting the flaked almonds I suggest you do a bigger
batch, as they are lovely sprinkled on top of porridge or
yogurt and through salads.
