MADELEINE SHAW’S THREE BEAN CHILLI

Spruce up your WFH lunches with this 3 Bean Chilli

Packed full of flavour and all the good stuff. This 3 Bean Chilli is a great one to batch cook, why not freeze for later for a perfect fuss free meal? This recipe is also perfect for reducing food waste as it would taste great with pretty much any extra vegetables you want to add in.
INGREDIENTS

2 carrots, cubed

2 yellow peppers, cubed

1 courgette, cubed

1 large white onion, finely chopped

2 garlic cloves crushed

2 tsp of ground cumin

1 red chilli

1 tbsp of smoked paprika

1 tbsp of dried oregano

2 cans of chopped tomatoes

1 can of black beans, rinsed

1 can of chickpeas, rinsed

1 can of butter beans, rinsed

500ml of vegetable stock

50g of dark chocolate

STEPS

Fry the olive oil and onion, add the cubed vegetables and garlic fry for a few minutes then add the dry spices.
Saute for a minute then add the beans, cans of tomatoes, stock, salt and pepper.
Simmer for an hour then stir in the dark chocolate at the end.
